Manual harvesting in boxes of 20kg, quick entry in cellar and decrease of the temperature of the grapes in the cold room for 24 hours, obtaining vinification in continuous cold.
Fermentation an ancient stone vat built in 1.413 built by the Jerome Monks who inhabited “Torre del Veguer” to make wine.
It is aged in clay amphoras during 8 months aprox, to maintain fresh and fruity aromas in the whole wine. Made with Grenache and P. Syrah.
